In a large bowl, stir together oats, coconut flakes, and salt.
Add melted butter and vanilla to a medium bowl.
Add honey and mix well to incorporate.
Pour Over Oats
Add the butter mixture over the oats and mix until fully coated.
Spread the granola on a baking sheet and bake for 50 mins, stirring every 15 mins.
Add to yogurt or eat as cereal with cold milk!
