Smores Bars

S'mores Bars are all the deliciousness without all of the mess. Forget the open fire with this perfect make-ahead treat for your next summer gathering or camping trip.

Ingredients

  • ½ cup 1 stick unsalted butter, softened
  • cup brown sugar packed
  • 1 teaspoon vanilla extract
  • 2 large eggs room temperature
  • 1 ⅓ cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1 ¼ cups graham cracker crumbs
  • 1 cup chocolate chips
  • 1 cup mini marshmallows
  • 2-3 chocolate bars

Instructions

  • Preheat oven to 350 degrees F and line a 9x9 inch square baking dish with parchment paper. 
  • In a large mixing bowl, cream butter until smooth.
  • Add brown sugar and beat until fluffy.
  • Add egg and vanilla extract and mix until well combined.
  • Add flour, baking powder and salt and mix until well combined.
  • Fold in graham cracker crumbs, about ¾ cup chocolate chips and about ¾ cup marshmallows.
  • Spread evenly into prepared baking dish.
  • Break chocolate bars into pieces and add to top of batter, sprinkle with remaining chocolate chips and marshmallows.
  • Bake for 20-25 minutes or until a toothpick inserted in the center comes out clean.
  • Cool completely on a wire rack. Remove from pan and cut into squares. Store in airtight container.

Notes

To make these "prettier:"
  1. Add additional marshmallows to each piece and heat in the microwave for 30 seconds, or in the oven at 400 degrees F for about 5 minutes watching closely. 
  2. To brown the marshmallows, use a kitchen torch, if desired.
  3. Add additional pieces of chocolate bar.
